Food Saving Hacks: Out of eggs for that golden finish? Try substituting heavy cream, milk or milk alternative with a little sugar added or even aquafaba — the liquid usually discarded from chickpeas — for beautiful browning!
Ingredients:
- Crust
- 2 pie crusts or puff pastry
- 1 egg, beaten
- Filling
- 2 cups of any leftover holiday food
- Leftover turkey, ham or roast
- Mashed potatoes and sweet potatoes
- Roasted vegetables (carrots, peas, Brussels sprouts, green beans)
- Cranberry sauce
- Stuffing
- Gravy
Instructions:
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Roll out pie crusts or puff pastry and cut into squares (about 4-5 inches).
- Place 2-3 tablespoons of your chosen leftover filling in the center of half the squares.
- Lightly brush the edges of filled squares with water using your finger. Top with remaining squares and press edges with a fork to seal completely.
- Place pies on a prepared baking sheet. Brush tops with the beaten egg plus 1 tablespoon of water for a golden finish.
- Bake 15-18 minutes until golden brown and crispy.
- Let cool for 5 minutes before serving.
