Food Saving Hacks:  Did you know you can eat the stem of the broccoli? Peel the outer layer off and enjoy it raw, steamed or roasted!

Ingredients:

    • 2 heads broccoli, florets and stems
    • 1 cup peanut butter
    • 4 Tbsp soy sauce
    • 1 Tbsp sugar
    • ½ cup warm water
    • 1 Tbsp sesame oil
    • 2 Tbsp rice vinegar
  • Optional: 1 tsp fresh ginger (or ½ tsp ground ginger)

Instructions:

  1. Cut the florets into bite-sized pieces. Peel the tough outer layer of the stems, then slice them into thin rounds or matchsticks for a crisp texture.
  2. Choose your cooking method:
  • Steam or blanch: Cook broccoli in boiling water for 3–4 minutes until tender-crisp, then drain.
  • Roast: Toss broccoli florets and stems with a little oil and roast at 400°F for 15–20 minutes until golden and slightly crispy.
  1. In a bowl, whisk together peanut butter, soy sauce, sugar, warm water, sesame oil, rice vinegar and optional ginger until smooth.
  2. Serve as a dip or toss your cooked broccoli (or other vegetables) with the peanut sauce before serving.
