Food Saving Hacks: Have leftover corn on the cob? Cut off the kernels and freeze them in a labeled reusable container. It’s an easy way to enjoy a taste of summer as a delicious holiday side dish.
Ingredients:
- 2 cups black beans (1 cup of dried beans)
- 2 cups corn, grilled or boiled
- 1 cup tomatoes, diced
- ¼ cup cilantro, chopped (including stems)
- 1 lime, juiced
- ½ tsp salt
- 2 avocados, cubed (optional)
Instructions:
- If using dried beans, cook them according to the package instructions until tender. Let cool.
- Dice the tomatoes, chop the cilantro (including the stems) and cube the avocados (if using).
- In a large bowl, combine the black beans, corn, tomatoes and cilantro.
- Add the lime juice and salt, then gently stir to mix everything evenly.
- If using avocado, add it last and fold it in gently to avoid mashing.
- Taste and adjust seasoning if needed. Enjoy as a salsa or a side dish.
